I have a CFW PSP Slim (2000) but I was told that the PSX games wont work on the Slim the same way they work on the PSP Phat. Is this true? I was told that I would have to use Popsloader.

I have done a search for PSX on PSP Slim but only get hits for people trying to install CFW on their Slims.
Any help is greatly appreciated. If someone can point me to a tutorial that would be great.

You only need to load Popsloader to emulate an older firmware than the one you are using. My experience is that PSX is no different than on phat.

Out of curiosity which game are you trying to run?
