Well technically all of the consoles themselves (except motherboard revision which you only have to worry about when buying a used 360) are the same except the arcade which most of the recent arcades either have 256MB of internal memory or 512MB of internal. The elite, like you said, is black and has a bigger hard drive (the one being sold now has a 250GB hard drive, but it has been sold in the past with a 60GB hard drive, and if I recall a 120GB hard drive). The Pro is currently sold at gamestop as a refurb package with a 20GB hard drive, and two controllers but I don't think it has HDMI output.
And then you got your Xbox 360 Slim now that is either sold with 4GB of internal memory or a 250GB hard drive. You can also buy a package that comes with Kinect.
Also any new regular Xbox 360 that you buy now is probably going to have a jasper motherboard which has reduced power requirements (150W), and both a 65nm processor and gpu that reduce heat output which greatly reduces the odds of a RROD.
