bricking is breaking your Wii. Technically you could brick it by causing physical harm, but we're talking about messing up the system software beyond repair. It is possible, but pretty rare if you are following directions.
best versions are 3.2 and 3.3
There are multiple tutorials on the net on how to downgrade. There's the Any Region Changer method and Waninkoko's cIOS method. Google.
Outside of the homebrew channel, pretty much nothing is actually installed on your Wii. Everything runs off the SD card which means yes, emulators run off SD. Most emulators probably support roms on DVD now, but the emulator itself sits on the SD card.
